The Bikini Cocktail
Serves 10 people
To make the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Cocktail (yields 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
To prepare the Syrup: Combine the listed components into a pan, bring to a gentle boil, mixing to dissolve. After that, turn off the heat allowing it to cool down fully. Decant into a sealable bottle, seal and refrigerate it in the fridge, where it will keep for up to one month.
To make Cocktail Base: Mix every spirits and syrup into one large bottle, leave to sit for one hour, then filter it best through a fine cloth, so it's completely strained.
For serving: Add 85ml of the cocktail base to a mixing glass packed with ice, and agitate lightly for one minute to chill. Pour to a frosted cocktail glass or a similar vessel, garnish with the cranberries adding the final touch with a quick spritz of mandarin oil above the glass.
